Quick and Easy Balsamic Baked Chicken

I’m on a Mediterranean kick lately, I don’t know if it’s the warm weather, the delicious ingredients or how easy it is to cook, but really I find myself day after day gravitating towards a Mediterranean gluten free meal plan. Whether it is a cucumber salad or some feta cheese with olives I really can’t get enough of it, so when I was brainstorming some dinner ideas, I decided to incorporate some Mediterranean flare and this Balsamic Baked Chicken came to life.

To be completely honest with you, this is one of the most delicious chicken recipes I’ve made to date. It’s completely jam packed with flavor, and it’s so versatile and easy to do that you can make it for a hectic weeknight dinner.

While I love to serve it whole with some garden veggies it’s also delicious chopped or shredded, and I use it on top of salads or as a sandwich filling (cheese + balsamic baked chicken + tomatoes + crusty bread) so I usually like to make a bit more of what we are going to eat to make sure I have enough leftovers for lunch.

The secret for all the flavor power is the seasoning mix. We are using a mix of balsamic vinegar olive oil, oregano, garlic, pepper, and brown sugar and we are coating the chicken with all of it.

The result is this juicy, super tender chicken breast that soaks all of the flavors. However, if you have some extra time on your hands you can also marinate it for 1 hour to supercharge it with even more flavor.

Then it’s just a matter of baking it for 30 minutes or until done, and if you are feeling extra lazy and don’t want to make the sides separate you can throw into your baking pan some chopped onions, asparagus and potatoes to have a one pan meal.

Ingredients
4 Boneless, skinless chicken breasts
½ Cup balsamic vinegar
2 Tbsps olive oil
2 ½ Tsps dried oregano
3 Garlic cloves, minced
1 Tsp pepper
2 Tsps brown sugar

Directions

In a bowl, mix the balsamic vinegar, olive oil, oregano, minced garlic clove, sugar, and pepper.
In a baking dish, place the chicken and marinate with the mix previously made.
Preheat oven to 400 degrees F.
Place the baking dish into the oven.
Bake for 30 minutes.
Serve and side with any desired vegetables.
