Grow vegetables from scraps made easy. Simply use the scraps from your store-bought vegetables. Add water, then dirt, and you’re good to go.

Groceries can be expensive, especially when it comes to buying the organic variety. So that’s why I love being able to regrow store-bought veggies and herbs. It’s a great way to save money!

Some of my favorites to regrow are romaine lettuce, celery, and scallions. You could also do this for cilantro,  bok choy, and many others!

All you need to do is follow these six simple steps and then you’ll be on your way to saving a few dollars off your grocery bill each month.

1. GATHER YOUR SUPPLIES

Luckily, this project only requires a few materials. Here’s what you’ll need:

  • Potting bin(s)
  • Potting soil
  • Store-bought veggies or herbs

If you want to regrow organic veggies, just note that you’ll need organic potting soil as opposed to non-organic. And don’t forget to keep an eye out for seasonal sales on these items to save even more money!

2. CUT OFF THE END OF YOUR VEGGIE

The bottom part of your vegetable is what’s going to get re-planted, so chop it off a few inches from the bottom in preparation for step three.

Make sure to do this to the veggie-only after you’re done eating it. Otherwise, the edible parts will go bad very quickly!

3. DECIDE IF YOU WILL USE WATER OR SOIL

Some veggies and herbs do best if they start out in the water (basil is one example), while some will only sprout again in soil.

Do some research to see what might be best for the veggies you’re growing. Feel free to experiment with a few different methods over time to see how the results vary.

4. IF YOU GROW IN WATER, TRANSFER TO SOIL AFTER A FEW DAYS

Although some veggies will do fine in just water, most of them will do better in the long run if they are eventually transferred to soil.

Celery, for example, usually needs to be planted in the soil after being in the water for about three days.

5. WATER AND TRIM BACK FREQUENTLY

We’re lucky that we’ve been getting so much rain here in Southern California. We’ve definitely been able to take it easy lately with our garden and let nature do its work!

But if your plants aren’t getting much water outside, or if you have them indoors, be intentional about watering them often and trimming them back if they get too tall. Also, if they’re indoors, make sure they’re near a window and getting plenty of sunlight.

As you can see in the pictures, our lettuce and scallion plants are reaching for the skies!

6. EAT AND ENJOY!

This is so the best part. You now get to sit back and enjoy the fruits (or veggies) of your labor.

Make a small salad with your lettuce, sprinkle a few scallions on your potato soup, or cut up some celery sticks as part of a healthy afternoon snack.

I love how our little garden has helped to transform our patio into a warm and inviting place. It’s truly satisfying to look out the window and see our veggies growing a little more each day.
