It is peach season here in the Carolinas. There isn't much better than a juicy ripe peach. Yum! Trying to find a good gluten free dessert can be hard at times. I found this one on Celiac.com and tweaked it a bit. We almost added blackberries to it, but I'm a purest. Maybe next time. Next time I'll also try doing half almond meal and half gluten free flour. I hope you enjoy this dessert as much as we have!
10 fresh peaches, peeled, pitted and sliced
1 teaspoon vanilla extract
1 cup gluten-free all-purpose flour
½ cup raw cane sugar
½ cup brown sugar
½ teaspoon ground cinnamon
¼ teaspoon Real Salt
½ cup butter
Heat oven to 375 degrees F
Line the bottom of a buttered, 8-inch square baking dish with peaches.
Sprinkle peaches with vanilla extract. Make sure that it is gluten free.
In a medium mixing bowl, combine the gluten free flour, cane sugar, brown sugar, cinnamon, and Real salt.
Use a fork to cut the butter into the flour mixture until the mixture forms pea-sized crumbs.
Sprinkle the flour mixture in an even layer over the top of the peaches, and bake in the preheated oven for about 45 minutes, until the peaches are bubbling and the topping is browned. I actually think it could be cooked for an hour, but check after 45 minutes.
